Preserving Fruit

Does anyone know any good ways to preserve fruit apart from jam and chutney. I was thinking of bottling/canning but all the web info on it is from the states and has put me off with talks of botulism...

Radishes falling over

Does anyone know why my radishes and turnips come up, then seem to fall over before growing properly? Is it not planting them deep enough. They do grow after that but the roots never seem to firm up...
