Ok, all this talk about salmon is making my fancy a nice salmon fillet.

How would you cook yours and what would you have it with?

A friend brought me the pomegranate molasses back from turkey for me. It makes a lovely salad dressing, plus it has a sweet-sharp-salty-sour taste that goes with lots of different flavours

Thank you everyone for all the ideas. I love the skin, think it's the nicest bit if done a bit crispy and so full of flavour.

Went for using some bits I had last night so wrapped my fillet up in foil with some oil, dark soy sauce and seasoning and had it with some rice and sweet chilli sauce. It was lovely!
Pomegranate molasses make a good marinade for shoulder of lamb Add honey and a selection of Indian spices to taste
