Depends on your colouring, really. Any plain colour would be OK, along with a complementary tie - nothing too loud, but you could have a subtle pattern on it.

pink shirt, any tie with small patterns on, no large flowers or patterns.

Wine shirt and wine tie - then you could drink red wine without worrying haha, but really wine/burgandy goes nice with grey. Or a white shirt and wine/burgandy tie.

Pink does look nice with grey and I agree it looks trendy. If you're not 100% sure though, I'd stick with white as you can never go wrong with a white shirt I guess.
