How do anti-fogging mirrors work?

The mirror is sprayed with a liquid - a surfactant - which dries to form a clear film. When water hits a mirror, it would normally form beads. But with a surfactant the beads run together and you can see through it. A surfactant is a chemical, a form of detergent, that lowers the surface tension of water.
A good emergency anti-fogging device is a slice of raw potato. Rub over a surface and then wipe away any excess.
Or apply a weak soap solution (works well while shaving). or in extremis lick the mirror as saliva acts the same way.
