Does anyone know if my 2 year old son has to have his own seat on a plane when travelling to Florida or can he sit on our knee.

All depends on the airline, but it's a long way to Florida, you might find by getting a cheap ticket for him to have a seat is worth the while for when he's asleep. YOU as parents need to arrive over there well rested too!!
Yes. IATA regulations require all passengers, 2 years and over, to be allocated their own seat (although, obviously, you should book an infant care seat when you make your reservation).
