Factor, tempering is the preparation of the chocolate before enrobing.

Thanks EcclesCake- it was just a term I recall hearing on one of these Mary Berry/Paul Hollywood programmes. I've checked ENROBE and agree it is right but I'd never heard the term before today
60a must be TSUNAMI, but it means 53 d would need to be ANNUM instead of ANNUS. Trouble is annum isn't latin for "year", it's wrong :-(

It is Latin for year under certain combinations, e.g. per annum = yearly
I take the point about per annum, but I still don't think it's a very good clue for a GK crossword. The Latin for year is annus......it's only annum if you've got the rest of a phrase to make it be in the accusative :-p
