Homemade pasta made with egg yolks

We are really into using our pasta machine but! tried a few recipes, but havent found the ultimate pasta recipe, should we be using only egg yolks to get that lovely hue, as some recipes we use look quite grey, we want our pasta to look and taste like the ones on the cookery telly shows, have any abers got a tried and tested fantastic fresh pasta recipe thanks!!!

here I come to the rescue ! (lived in italy for 14 years)

firstly after my experience with english conconct receipes you should probably burn any you have !

there are two kinds of egg pasta: egg and water

egg pasta is 1 egg per person and as much flower as is needed to make a good doe. don't add water unless absolutely neccesary.

water pasta is what you buy it is simply flour and water and does taste better than the super market (especially if its from sainsburys)

in both cases hard grain flower MUST be used esle you will just finish up with much !
ps that was meant to be two kinds of HOME MADE pasta not egg (stupid me should reread before pressing send button)
1 egg yolk per 100g of "00" flour usually works for me.
Have you thought to get an egg machine at Machineryshops.com?
