I'm making a lemon meringue type trifle for this afternoon, I'd like to get the meringue to taste a bit lemony, if I put some lemon juice in after it's been whisked do you think that will work and not affect the cooking, I've got lemon curd if that might be better.

Thanks for any replies :)

I always put a teaspoon of lemon juice in my meringues (others use vinegar) but I'd have thought adding enough to make it actually taste of lemon will undo the whisked effect and it won't cook properly.
Lemon zest would be better if you wan the actual meringue to have a hint of lemon as it has the concentrated oils in the zest.

If you have a fine microplane type grater that will be perfect, make sure you one take the yellow off and don't take the pith as that is make it bitter.
I wouldn't add extra lemon juice to it....you could maybe add some lemon zest?
Whoops! Sorry Eccles! :)
