hI, Ive got a good friend and I would like to offer her some kind of role at me wedding next spring. I have bridedmaids, readers and witnesses so cant overdo any of those. Has anybody got any ideas about a role that I can give her? something special, not too OTT.......

Ringbearer?
Toast mistress if she is confident enough....
Meet and greet at the venue with buttonholes order of service etc working with the ushers
Ask her to organise the gifts that the Bridge and Groom give to the Bridesmaids etc.

Give her a role in the planning of the wedding, i.e helping to ensure all the flowers, wedding gifts, etc are ordered and in place on the day, thus releaving some of the stress from you :)
Meet and greet and offer buttonholes is a lovely job and not too OTT. It gives the guests a point of contact as they arrive in case any of them are a little lost or arriving alone and once everyone's in and settled she can revert to being a guest like everyone else.
Witness? To sign the register?
best woman?
Buy a Guest Book and ask her to get everyone to write in it during the reception? Organise the wedding gifts/cards etc at the reception? are you sure she'll want to do anything though - it may end up being work for her to do anything at the reception. Perhaps an Usher would be a good role...
