Nokia Lumia 900. Can I log out of my gmail account? or how do I password protect the phone?

I have just got it, and its synched to my email, but I wish to know if I can log in and out like I do on the laptop? Is the data encrypted? Or can anyone read it ?

You can't log out of an individual account.

pin protect the phone by going to settins > lock and wallpaper, set the password to on, create a password and set an auto lock time.
