I believe it is used to make knives but do not know its composition. I always thought good quality stainless steel was not ferro-magetic but this steel is, so making me doubt its quality.

Thank you for the information. With what you told me I did some more searching and found the answer I needed. I was used to austenitic and ferritic stainless steels and always regard ferritic as inferiior because it had less corrosion resistance. The simple test I use is a magnet. However, from your answer I learn that Din 1.4116 is a martensitic steel and magnetic. So it turns out austenitic steels are the exception rather than the rule.

If I had not retired i could have sorted all this by XRF anaylsis in my lunch break!

This is a martensitic stainless steel. They are magnetic.
Austenitic are non-magnetic. Martensitic steels are best for knives because they are harder and sharpen more easily.
