Only 3 left now - CH? ?ARITE and ?OSE
The answer to 'not beef' can only loosely be described as a pair in my opinion.
One of the elements of X and Y is two words.

I give up!
'not beef' in the sense of don't complain. Answer is a phrase meaning to be stoic in adversity. X and Y, where Y is two words which is your anagram.
Your pair from the amended letter is a (vague) clue to an across answer and to the title of the puzzle. Think 2xT and ?ose

At last all is clear to me - thanks.
Can anyone put me out of my misery? I have most of the pairs and their respective anagrams and association entries. All I have left is din?, m?ges, ?ose and ?arite. I am looking for two pairs that satisfy the definitions of Trouble and not beef. Also have the island pair but can't associate it with a normally clued across answer. Help!
Sorry - I'm also lacking the answer to ch?
Have now worked out 'trouble'. Now left with ?ose, ch? and ?arite one of them an anagram for the pair 'not beef'. Also need help with the island pair.
Not beef = grin and bear it. This gives 'barite' (the anagram part) and 'cha'(the grin part, chagrin, not very good!) The '?ose' follows an item of clothing (TT[from the islands], double?...+?ose).
Thanks - I did in fact work out grin and bear it just leaving me with justification for ?ose from the islands.

From what you say I'm assuming that clothes needs to be highlighted but the final entry could well be rose rather than hose!
I chose 'hose' because of 'doublet' - the only link I could come up with. I highlighted 'clothes' - partly because of 'hose', but also because of the puzzle's title.
Indeed it could be nose that is entered.
Doublet and rose, doublet and nose...?!
doublet and hose is cockney rhyming slang for 'nose', but like the other associations one partner is associated b with another word. I googled tobago and found tobago rose.
Aah I see - I was so relieved when I got to the end of this, with 'hose', that I didn't consider any other options.
