Giant veg and bird cooking times

Hi, I will be attempting a world record in a few months for worlds largest roast dinner. Has anyone got any ideas for "Giant veg"? The gravy, yorkshire puddings can all be made larger and in larger volumes but am finding it hard to think of giant veg, we've thought of using giant roast pumpkins as the "potatoes" would the skins be edible if roasted? Also instead of a chicken we'll be using a whole ostrich, so any more ideas would be welcome.

Or courgettes for green beens. The problem with a giant york pud would be getting it to rise as well as a smaller one; I would use a cake tin(s) - (if this is not too small to blend in with the rest).

I hope you post a link / pic of the finished piece & is anyone actually going to eat it?
