Yesterday i briefly caught something for the weekend and they were using amongst other things milk and lemon juice as a marinade as the milks lactose (I think) breaks down the meat resulting in a more tender meat.
Does the lemon juice not curdle the milk?
How good is milk as a marinade as you can't leave it that long at room temperature can you?
Yogurt is dairy and contains the same things as milk, which is better milk or yogurt, i'd guess milk as it's more fluid and get into every nook and cranny though i could be wrong.

Google has loads of links for ''milk marinade'', and you needn't worry about room temperature - just put it back in the fridge. It'll still marinate there.
i know someone who swears by yogurt for tenderising steaks
it did curdle and looked horrid but they seore it tasted really nice.
considering it was cooked for 3 hours in all!

here it is if you want to try it
