I would like to make some cheese sauce using cornflour and can't find the recipe. It only uses milk, butter, cornflour and cheese, with mustard and black pepper for flavourings. I am sorry to be so ignorant as to how to make a basic sauce, but I used to constantly refer to a recipe book and can't remember which book it was as I haven't made it for ages. Any help would be appreciated as I'm very hungry and have already cooked the macaroni! Moyra

do you need to use corn flour? Or will ordinary flour do?

To make a cheese sauce with normal flour, you melt the butter take it off the heat, add the floor and get it into a paste and cook that gently and then add your milk slowly while it is off the heat - I usually use half milk, half chicken stock, then add in your mustard/pepper and melt in the cheese, I guess the principal would be the same with cornflour, or you could warm the milk and add in the cornflour blended with a little milk, but i have no idea what the proportions would be.

Well I have always made it using cornflour and I have just bought a huge bag of it, so yes I would rather use cornflour. I just can't remember the method to make the white sauce which I then add cheese to.
I've never used cornflour for a basic white sauce, just use Plain Flour.
sorry, after you blend each bit of milk in, you need to put it back on the heat and stir - otherwise your sauce will be cold and the cheese wont melt!
I hope you washed the "floor" before putting it in the bowl annie0000. Lol.
