As you will probably know; to do this is illegal. We must therefore assume that anyone posting an answer telling you how to do it will be committing an offence by aiding and abetting you. Unless you can convince us that there is a legal reason for your request, of course.
You can't do it legally! If you have got cruise control, you probably can't do it at all (you couldn't on my old DAF 95). If you pull the tacho fuse, you are driving even more illegally and will probably find you have got a dead accelerator. You could disconnect the RSL cable by the injector pump, but would have to break a seal to do so, and I think on a FH the injection system is electronic, so you probably can't. I expect there is a way of re-chipping the engine management computer, but this again is illegal. BTW, you won't gain much anyway. I once 'raced' a bloke from Paddock Wood, Kent to Winsford ,Cheshire. He said his limiter didn't work and he would be beat me by miles. Its about a 3 1/2 hour trip. He beat me by 5 minutes. So stay legal, it ain't worth the hassle.
if you can get to the fuse box i believe it either fuse number 12 or 13...one does the tacho and the other does the limiter but as sddsdean says most now are linked to the compuer controlling the engine management so all you'll probably get is a dead engine.
