Hope someone can help my son with his college coursework

What is the purpose of 'sweating' vegtables as part of the base for a cream soup?

Thanks in advance.

You do this to soften and extract the maximum flavour from the vegetables, allowing the soup to then cook gently at a simmer. This is why I do it anyway, hope it helps.
sweating the vegetables helps to convert some of the starches to sugars, which adds to the flavour.
