HELLO...
what is the best way to grow a rose from a stem cutting..
its been in water for about 2 months and has become quite leafy,
is there a planting compost or stem growth i could / should use?

Yes there is, just pop along toyour garden centre and they will point you in the right direction. I just stick mine a pot of soil and away it goes :-)

Both good ideas, but keep in mind that if your parent rose was a hybrid, there's no way of telling what you're going to wind up with...
