Do any Irish peeps actually talk like Jim McDonald off Corrie.......you know, "So it is....so it does.....catch yourself on", and so on?

Only Northern Irish mrs c
Those expressions are very Gaelic in construction, and have migrated themselves into the English spoken in Ireland. It's a similar story with Scots Gaelic...

Including my family in Belfast and my friends up north!
Such cliches and bull! Makes me cringe
It is indeed a clichéd version of the Belfast accent, Suzy, but all clichés have some basis in fact. I'm pretty sure that you will have heard (Northern) Irish people use these types of phrases in their natural everyday speech, probably older people than you though...

Jim does seem to overdo it a bit. (I know it's only acting).
Yes, I've heard these phrases, I had an uncle who said 'so it does' quite a lot at the end of sentences when I was a teenager.
^ And you use 'catch yourself on' more than you realise or would care to admit...
I've never even noticed myself do it!
You should do a survey of 100 Northern Irish people...

My Nan is from Belfast and she doesn't speak like that. Nor does any other NI person I know.

I've never heard anyone say 'top 'o the mornin to ya' down south either...
i do know some ni'ers who speak like that. it is rather grating.
My Mam used to say Dee Ling..as in 'poor soul'..she was from Cork.
