I plan to make chowder tonight and I know it might sound silly but I don't like the liquid in the chowder to taste too fishy!
Could I use some fresh chicken stock instead of fish stock? Or should I just use the cream and water (maybe with a small dash of fish sauce)?

You can try. Or make a weaker stock if using a cube..
i always thought a chowder was made with milk/cream mix rather than stock anyway?

I used water and milk instead of stock and still added a bit of single cream at the end - worked a treat!
