I've never kept parsnips in the fridge but have kept them for a month or more with no problems (they were only a few hours old when I started though).

If they start to go soft, no problem, just peel, chop, blanch and freeze. :-)
they should keep well in the fridge, depends on what they're like when you buy them. i'm doing parmesan parsnips for christmas day this year, very tasty and can be done in advance and frozen, doing mine this afternoon:

I reckon to keep un prepared parsnips and spuds for about a month in the fridge provided that there is not too much condensation and the air flow is good. I take them out of the polythene, or make huge holes in it.

thanks guys...
I'm keeping my root veg and sprouts out in the garden during this weather, in a big plastic box. Saves room in the fridge, and they are certainly keeping cool. I bought two lovely big sticks of sprouts in Tesco today, they will certainly keep.
We've got long life cream, tastes OK and will last until new year if unopened!
Peel & douse with boiling water, dry off & store in freezer till needed; most vegs will keep likewise.

i would keep mine in the garden but I live in a four floor house and so its a long way to go as the kitchen on the top floor, garden is even below fourth floor on a lower terrace lol so that 5 floors to climb and when I'm tipsy?????
Yummy. I'm definitely going to try that. I love roast parsnips and this will make them taste even better.
Hang 'em out of the window in a carrier bag.....

Lakeland sell plastic storage bags that will help to keep food fresh for longer in the fridge. I use them every Xmas so that I can buy well in advance and be sure of having the fruit and veg I want - very handy paarticularly this year as I will have to work every day between now and next Saturday - but I got up early today and did the food shop - sprouts and grapes etc now tucked in the fridge in their special bags. Phew!
Apart form potatoes we keep all our veg in the fridge, keeps for ages!
Oh and if your gonna roast your parsnips cover them in honey first Mmmmmm delicious!
