Good Morning All,

You'll all be glad to hear that I am nearly over my bought of disgusting sniffles/flu/vileness

And thus my appetite returns and I start thinking about food again!

It seems to be a traditional thing to make a kind of turkey-curry-leftovers-thingy on boxing day. I want to know, what is in your recipe? What to you chuck in?

Alternatives also welcome!

- Cut turkey into small pieces and season with garlic, herbs of your choice, salt and hot pepper (optional).

- Marinate for 30 minutes or more.

- Heat oil in thick-bottom pot or skillet.

- Mix curry powder with 1/4 cup of water until smooth; add to hot oil and cook 2 minutes.

- Add turkey and stir to coat in curry; cook until all water dries out; stir well.

- Add tomatoes and onion; cook for a minute; stir in 1/2 cup hot water.

- Lower heat to medium; cover and cook until meat is tender; add more water if more gravy is necessary.

You could also add a couple potatoes, peeled and cut into chunks. Will help make gravy nice and thick. Serve curry over rice or eat with bread or however you like.

i had a late bday pressies last night - stinking bishop, omg did i make a pig of myself!

i love "leftover" sarnies, bit of turkey,stuffing, pigs in blankets and roast pots on the side - with gravy to dip into as well.
Turkey and potato bake...made this at work for the homeless yesterday....

My usual way of making a turkey curry would be a variation on that recipe, replacing the pineapple with sultanas. (I usually cook 'by instinct' and just throw in what seems best, rather than actually following a recipe).
