I insured myself, my husband and son on our 2.3l toyota avensis last year for around £650.

This year we are getting quotes of £1000 which i can't understand despite searching numuerous comparison sites.

I know premiums have gone up this year and my son is 23 but i didn't expect such a large jump. Anyone have an idea why?

Something must have changed other than your insures policy. Wise to not divulge too much in a public forum, contact your broker.
Actually from the figures you quote the rise is over 50%.

Motor insurance premiums are generally rising (and I think this year’s average is about 20%). So even somebody who has a full no claims bonus (i.e. one that cannot go any higher) and has had no accidents, claims or convictions can still expect to pay considerably more.

The main reason for this is the excessive costs of meeting many personal injury claims. These have risen in number and costs because of “ambulance chaser” solicitors encouraging people to make claims for injuries where, without such advice, they may not have bothered. Many of these claims are also fallacious.

Having said that a 50% increase does seem a bit hefty.

Spend a bit of time with Martin - it will pay off

If you choose the "best risk" as advised by Eddies 1 then presumably they will have some No CLaims Discount in their own name - and watch the commuting and business use as these are often restricted to the main driver
Stick a low risk driver with a clean record on as a named driver. This can bring the premium down.
I have recently had my renewal from Direct Line. Last years premium was 400, this years 650, which without working it out I make it around a 60% increase? I have had no claims or convictions in this past year so even though I expected a rise this is ridiculous!!
Is there a regulatory body we can approach to make an appeal?
