Is it possible to map a route ie for running or cycling and be able to find the mileage between each stage ,as opposed to having a starting and finishing line.

I have looked at all the usual maps for car journeys and they only give the easiest /shortest routes.

If you click get directions on the left, in the blue bar, you have the option to click on a bike (don't know what difference that makes though"but more useful is, if you set a start and finish then once it's given you the route it suggests you can drag the blue line on the map about to change the route to where you want. and also if you right click on the blue route line at any point and select add destination it will add a "waypoint" on the route, which you can use as your stages.
This is a site I've used to map walks, but it can be used for cycling too.

Do it on Autoroute ..
You can click waypoints along/near any calculated route, and then look at/print directions and maps if needed.
I like Autoroute, as its fast and everything is on PC.
There is a site called mapquest. But I did use another a while ago which was excellent. I will try to remember which it was and post it when I do remember.
