Can anyone recommend a very good beef wellington recipe? I've had a look on google but many of the recipes seem very ordinary. This would be for Christmas day. TIA

Can you make your own pate?

Also another tip is to put thin pancakes on the bottom of the pastry to stop the juices making it soggy.

I made a mushroom pate for beef wellington a few years ago which I had seen on Britain's Best Dish, unfortunately they no longer have it on there so I had no idea how I made it.
