Other than butter, cheese, chilli, coleslaw, beans & cottage cheese what might you put in a Jacket Spud?

I'm doing a mini jacket spud tapas on Sunday for the family and would like some more ideas so there's plenty of fillings for them to try.

Scoop the potato out of the skin and mash with butter. Then add chopped peppers, finely chopped onion, grated cheese and prawns. Season well then spoon mixture back into the skins, top with more grated cheese and reheat in over till cheese has browned.

Crispy bacon crumbled ,mushrooms with some strong grated cheese,spring onions and sour cream.
Cheese and leek is nice .. saute some chopped leek then mix it with grated cheese with the potato ..pile back into skins and put under the grill.
Prawns in a marie rose sauce (I make my own - equal quantities of double cream - better if you can get the extra thick - salad cream and tomato ketchup)

Just lately I have been using morrisons sandwich fillers as a topping - Bacon and egg, egg may, tuna a sweetcorn, coronation chicken, cheese and onion etc etc. I am also going to try Pilchards in tomato sauce tomorrow.
Scoop out the potato and mix it with hard boiled egg and a little mayo and black pepper then refill and sprinkle lightly with paprika (or cayenne if you like it hot).
For ease my wife likes garlic butter with spring onions
Tuna mashed with philadelphia cheese and chopped spring onion. Or substitute hot-smoked salmon for the tuna.
Stewed steak in gravy....bacon and beans....chicken tikka fillets....NOT ALL TOGETHER!!
