Courgettes, how can I make them tasty.........

It's ages since I had any, I seem to remember slicing them and putting cheese on them and cooking them in the oven. Any suggestions?

i'm putting them, chopped, into a tomato and veg sauce to have with pasta tonight, with a good splash of balsamic vinegar. i also like them sliced and fried with onions, herbs and garlic.

make a courgette quiche, buy ready made pastry and line a tin, cut courgettes very thin and fry till golden brown then drain on kitchen paper, place a layer of courgettes sprinkle grated cheese on layer and keep layering with courgette and cheese till you have none left. Beat two eggs add salt & pepper to taste + a little milk pour over courgette layers add sliced tomato across the top [ optional] then lastly cheese on top [ parmesan if you have some], and bake in a hot oven approx 15 mins till the egg is set, serve hot or cold.
