Sa Marche or Sommage?

On cooking programmes when it shows chefs in professional kitchens I often hear them say something like "sommage". I would like to know what it means or translates to.

A google search suggests that it means "check on" ie an order has been received into the kitchen, however I have also seen someone suggest that it is "sa marche" and if so then I would like to know what that translates to in English.

Didn't know whether to post this here or in Food&Drink but decided on here as I am more interested in finding the correct term and the origin of the word.

I've also tried drag and drop from the character map but no success - didn't really expect it to work but thought I'd try something different!!
