Tzatziki - Low fat Greek style yoghurt, cucumber (cut in half lengthwise, scoop out seeds with a teaspoon, chop into dice) add fresh chopped mint - very refreshing with curries, kebabs on mexican taco's etc.

Salsa's - chop any fruit you fancy, mango is good, nectarine, tomato, peppers, spring onion into very fine dice

finely shread red or white cabbage, add very finely sliced onion, and grated carrot or with red cabbage, apple is nice to make apple slaw instead of mayo you can use yoghurt, creme fraiche, or make a vinaigrette with olive oil and vinegar or lemon (olive oil is good fatty acids)

Sliced beef tomato, diced beetroot and onion, with fresh torn basil, again lemon/citrus dressing

Chicory, rocket and orange salad is lovely with fish or chicken

apple carrot and pine nuts

hope there's something here that takes your fancy
