when you get the pickle tray there's always a selection of 4 - lime pickle, mango chutney, a yoghurty one and an oniony one. Can anyone tell me how to make the yoghurty and oniony ones please?thanks.

The yoghurt one is called raita

1/2 cucumber

1 green chilli, seeded and finely chopped

300mls natural yoghurt

1/4 tsp salt

1/4 tsp ground cumin.

 

Dice the cucumber finely and put into a bowl.  Add the chilli. Beat the yoghurt until smooth then stir into the cucumber and chilli mix.  Add the salt and cumin - cover and chill before serving.

This is the basic recipe - some add chopped mint or coriander leaves others add chopped tomatoes.  All down to personal choice.

We don't eat in Indian restaurants (make it at home) so don't know what kind of pickle the onion one is. What else is in it - is it raw onion etc?

ludwig, if you're feeling lazy, both The Curry Club and Pataks (Asda) do a very acceptable raita.

Thanks for those answers, enilorac the oniony one is basically finely sliced or chopped onion but there's obviously something more to it - some sort of spice is added but it's very mild tasting. It's usually but not always a pinky colour, and is quite liquidy in the bottom of the dish, as if they've added lemon juice or something.

For an even simpler version of the yoghurt one, simply mix a very small amount of mint sauce into a bowl of natural (or greek) yoghurt, a pinch of salt and a couple of chopped coriander leaves.  Yum!

I've no idea about the pinky liquid stuff in your onion mix, our curry house simply chops onions, tomatoes, cucumber and some coriander together.

Sorry enilorac, just a thought. Since I have squandered hours of my life trying to emulate the professionals (Indian restaurants) and failed spectacularly, I'm always on the look out for shortcuts.

Would anyone like my recipe for a spag bol, it's wicked, and I'm not joking.

ludwig you will think I'm kidding you but I swear this is true. In my fav indian restaurant I asked for the recipe for kebabs and various pickle dips, which they gave me.

One of them was this:

chop a small onion very fine cover it in tomato ketchup stir it together and refridgerate for 24 hours, then add same amount of finely chopped tomato and a small amount of chilli powder stir it together. It goes well with kebabs or popadums.
