chefs food order holder thingie

this has been bugging me for ages, when a chef gets a food order. they go in like a strip thingie he just slips them in and pulls them out (sorry if this is not making any sense lol) how do all the slips of paper stay in the holder and how can one be pulled out when that food order is done without all the others falling?? my fella keeps saying i need to get out more...lol....its been bugging me for ages now as i dont understand how it works....help before i go crazy lol

The lip of the shelf has a pice of metal over it like an angle iron (L shaped. In the shelf edge are individual metal rollers that grip the paper when you push it in)

I will try a diagram and hope it comes out right.

The bit on the left is a gap and the O is a roller. The paper slips between the roller and the metal at the front (on the left) of the shelf. And is held lightly.
It didn't come out right but hopefully you get the idea.
