What's the best way to make tasty crutons without burning them?

Deep fry cubes of bread in very hot fat.
or buy ready made if you want to cheat.

I have baked them before now that seemed to work

smear the bread with bacon fat u save from grilling bacon and put it under the grill,then cut them up..yummy on chix livers 
Put the bread cubes (about 1cm or half inch) in a bowl. Stir in enough olive oil to get them lightly coated. Season with black pepper/and or salt. Spread out on a baking tray and cook for ten minutes in a hot oven but keep an eye on them so that they don'y burn. Delia's recipe off the top of my head but it's on her website.
