Not so much a question as a suggestion...my all-time favourite and easy chicken dish.

In a hot pan, fry chicken (legs/whatever) in a little oil...both sides, till brown. Grind loads of FRESH black pepper on each side. Add a glass of white wine and reduce heat. Add six cloves of garlic per person (this is the highlight - don't skimp), a handful of chopped spring onions...put lid on pan. Gently simmer for 20 minutes or so then remove lid and turn up heat, leaving a little wine and juice to serve over baby potatoes or amsh...nice served with green beans. The chicken should fall off the bone and the garlic should be soft and yummy. Enjoy..with the left-over wine!

The rest of the bottle that didn't get used in the cooking.

We normally use an average-priced Aussie wine and it's good enough to drink with this dish. After all, it is called 'Peasant's chicken'. Hope you try it (and enjoy it!) :)

That sounds delish. Although I don't like wine. Is there something you could substitute the wine with?
oh....you mean I can't drink it while I am cooking....not sure I like that idea!!

HOW much garlic????

I love the stuff but six cloves per person seems a bit much!!!

No, really...it's not a typo - 6 cloves per person is what this recipe is all about. It's simmering away for 20 minutes so it's not at all potent once it's been cooking for that long. Honestly.

are the garlic cloves chopped or anything - or peeled and left whole?

Definately left whole. I prefer to peelthem, but when I first tried the dish they were still in their skins, but popped out easily when squished with a fork.
i think it sounds very yummy... will try it over the weekend.
