Google TrueCrypt and FreeOFTE. Both these free programs will secure your stick but you will need to read the documentation carefully. I seem to recall that one of them needs admin privileges on any computer that you use the stick on.

Some memory sticks come with this facility when you buy them.Sandisk cruzer micro for example.
