If you are coming to Sta Eulalia then there is a souvenir shop called Playa and they exchange money commission free - even we who live here change �1,000's  as its cheaper but don't know anywhere else.

We're going to Portinatx, but as its unlikely that only one shop on Ibiza is offering a special rate then it is probably better to exchange over there (unless anyone can advise differently?)

Portinatx is a much smaller village so the exchange rate there will not be very good - you'll have to compare rates. And do look for No commission places and check their rates.

Open a Nationwide current account and pay your holiday money into it. We used ATM's in Majorca recently. Got good exchange rates (1.46 ish) with no charges whatsoever. Even using it as a debit card we got the same rates in most shops and restaurants (the worst we got was 1.40).

p.s No I don't work for Nationwide!
