If I leave a half shoulder of lamb in slow cooker on auto from 7 am to 6pm will it be overcooked and should I add any liquid to it?

I normally add just a tiny bit of water although it's not always needed as the lamb will release enough of its own. Keep an eye on it though as it can quickly turn from perfect to shrunken in no time at all.
Hint - make up some rosemary/garlic butter, score the surface and cover the joint before you cook it.
