my knee keeps clicking when I bend it.  It sounds more like bones crushing or something like that and it hurts.  Does anyone know what it could be?

Sounds like German kneesles !! Sorry, seriously it is common for some people to experience clicking or other sounds with knee movement. Most sounds are related to the way various knee tissues rub against each other with movement.

However, painful clicking can be caused by certain knee problems. The most common of these is chondromalacia which is a roughness in the cartilage surface. Other common causes are a torn cartilage or a chondral injury. Torn cartilage injuries are damaged knee cushions. Chondral injuries can be major injuries to the knee surfaces.

Since many of the problems that cause painful clicking in the knee can be treated with good results, you should probably see an orthopedic physician. There are a variety of treatments that can provide excellent results often resolving all of your pain. You should know that it is better to treat painful knee problems sooner than later to minimize the risk of further injury

Mine have done this since I was a child whenever I crouched down and I don't suffer any ill effects from it.

Although I can feel when it needs to be clicked. It's as if it stiffens and then I need to bend it so it clicks and there's a release and my knee feels normal again.

If it doesn't cause any pain I don't think there's anything to worry about. -  I don't

Unless you have had a recent painful knee injury (for instance falling over on the ski slope) you are dehydrated - drink more water!
