I have had two dogs with Colitis. The first one started with malabsorption as a puppy, and it was controlled with a prescription diet. (Hills ID).

My eldest bitch (now 5) used to have regular bouts, with terrible diahroah. I stick to a complete diet with boiled chicken and vegetables, and she doesnt have any treats other than dog biscuits I know she is ok with. For any flare ups I either use Protect from Stock Nutrition or give her a course of Protect and Rebuild from Fit and Fertile for a few weeks. Alternatively Acidophullus tablets from the health food shop given daily with protect the gut flora.
