You could mix some paprika with some fine breadcrumbs.

I'm lazy and buy the packet ones you get in supermarkets as they do them lovely :)
in a bowl place the following ingredients

olive oil
freshly minced garlic or garlic powder
lemon juice
salt & pepper
chilli powder
dried herbs of your choice

mix together and throw the wedges in, mis again until it's all coated and bake - yum

I use a gordon ramsey recipe. One you have boiled the wedges, take from the oven your heated baking tray, put some olive oil on before you put the wedges on, put a little more oil on the top of the wedges, then some sea salt and chilli flakes and bake for 20 mins. We had them for tea tonight and they are really nice.
Never boil the wedges, just chop them season with sea salt and chilli flakes or even cajun spice, roughly toss with olive oil, bake in oven turning now and again for about 45 minutes or till crispy and cooked bon appetite!!!
Make your own practice with whatever you like.
You all or a combination of the following.
Black pepper/mustard/ herbs salt
chilli powder/ tandoori masala powder or tandoori paste/ herbs such as rosemary.
