I'm not sure what the difference is between booking and prebooking. Getting rooms depends on the time of the year or the time of the week etc and may depend very much on local factors, eg is there a convention on in town, is it school vacation etc. Greyhound buses often stop in the slightly dodgier parts of town, where you mightn't necessarily want to sleep. Sometimes you get towns with a million motels, sometimes you can't find a bed anywhere. If it was me I'd do some planning ahead and book some rooms somewhere you can get to without difficulty.
Are you male or female ? be very careful going on the greyhound buses , my sister went to america and was forwarned about traveling on the greyhound buses by an american (for safety reasons )
i once flat shared with a guy who done something similar. not to sure the company but the bus had bunks on it and he toured a lot of america this way

might be worth looking into. it sounded great. it seemed to be a mix of folk on the bus and they all became good friends by the end of it.

it would've been about 4 or 5 years ago he done it so not sure if they will even still do it
