Rice cake

I have a recipe for rice cake which should have a soft sticky top. Mine always has a hard,cracked top. Please can anyone save my sanity and give me the reason why.

Try making a hollow in the centre so it doesn`t rise too much. I usually give them about 40 mins. Perhaps try a lower oven temp. I use 4 eggs to 8 oz of rice.

Dear rottenarse o;), 4oz butter, 8oz caster sugar, finely grated rind 1/2 lemon, 4 eggs & 8oz GROUND rice. Line cake tin with butter & floured greaseproof paper. Cream butter, beat in sugar add lemon. separate eggs, add yolks 1 at a time beating hard, whisk egg whites & gradually add while mixing.
