I made jelly from 2 pts of strained apple/chilli juice and 2lbs sugar, but it won't set.
Help, please, what can I do to help it set??

Did you use Pectin or only the sugar? The cooking for the non-Pectin recipes is quite a bit longer, looking for the sheeting stage.
You could try recooking it with Pectin to see if it will set for you, but that may not work. Additonally, you could try cooking it longer and re-can it. It's worth a try.

I make a lot of jam and find the best thing is to invest in a proper thermometer to make sure that it reaches the right temperature. I also use ( especially in strawbwerry) citric acid powder this is a lot cheaper
