When I take a photo the date and time shows on the photo. In Set Up, the date/time is shown as off, why is it still showing when I take photos?? I do not want the date/time showing on my photos.

try turning the time and date setting on and then off again to see if it clears it... if not may be a software glitch and updating the phone to the latest version of the software might cure it

This is a camera not a mobile phone.
oh do apologise... no idea then :)
Do you mean that you can see tha date and time when viewing the images using the camera, or that the date and time appear on images that you have printed or copied to you computer? If the former, I'm guessing that the camera viewer is superimposing them, rather than that they are actually part of the image.
