if you've notified your insurance company that's it's off the road and they're happy with that.. I'm happy too!

I assume you're not driving it.
If you are driving then the vehicle has to be legally on the road.
if you have no m o t then it is not legal so your insurance will not pay out in the event of an accident , the insurance will not payout because the car or vehicle was not legally on the road.
