I'm going for Knockwurst (having recently visited Berlin)
I wondered this also...went with Knockwurst.

Sarumite is away for the weekend at a Wedding.

Agreed - KNOCKWURST it is - thanks to you both and a happy wedding visit for sarumite
Chambers gives both, Collins gives only knackwurst. They both quote German knacken, to crack/crackle.

So on (very slim) balance I'm going for knackwurst.
as there is no conflict with the letter the compilers should allow either spelling
My Langenscheidt's German dictionary gives only Knackwurst. Both OED and Encarta give both.

Indeed they should, baitress. But have you ever seen alternatives offered when the results are published?
I would certainly go for Knackwurst, as I don't think Knockwurst makes any real sense in german.

A Knackwurst is a type of Frankfurter that makes a cracking sound when bitten (knacken = to crack)
