how do u cook a joint a beef so its nice and tender not chewy ???

depending on size about 170c for 1-11/2 hours
leave it till its black.....all the blood drained away
It depends on the cut and how much time you have, but low and slow should do it with plenty of basting, start high and reduce heat after 15 mins
Not a healthy answer but I cook my roast beef with lard and cover with foil and its always gorgeous

Fry it all round for a few minutes first to seal it. Heat the oven at 240C/Gas 9 then before you put it in turn it down to 190C/Gas 5 then cook for 15 mins per lb.
smoother in mustard put water in the base of the tin cover with foil until 20 mins before the end of cooking and cook slowly, also leave to rest before serving
