Hi, Saw a kebab recipe on tele at the weekend and the chef said to use 'a medium fat' cut of lamb to make the mince. Anyone know which cut he was talking about?. thanks

sadly i can't remember!! looking at lamb in the shops though i think it was probably minced shoulder
If the minced lamb has to have a good proportion of fat, I would suggest using shoulder.
it was a kakori kebab and was on Rhodes accross india
