Melting chocolate

After I've melted chocolate and poured into moulds to make lollipops I put into the fridge to set but am getting white spots on the chocolate when they come out of the fridge and have been wrapped. Has anybody got any suggestions?

Absolutely. DO NOT put or keep chocolate in the fridge unless it is a REALLY hot day. Chocolate never needs to be in the fridge at all. It will set quite quickly at room temperature. And also, when they come out of the fridge, they will develop a bit of condensation, which will make them appear sticky. They usually stay like that. And the white spots could be due to the fact that maybe the choc. wasn't stirred enough to mix in the fat which is in chocolate. I work with chocolate quite a bit and I get really annoyed when we are told to put them in the fridge to set. Go on the net and do some research about working with chocolate, and you'll be really amazed at what you find. I only know by reading books and checking things on the net, and learnt that we should NEVER add water because it will be ruined. You can add a tiny bit of vegetable oil to thin it out.
