He told Clarice that he ate the liver of a census tester with some fava beans and a good cianti, but that doesn't mean it's his favourite - just what he drank on that occasion.

If memory servies, i don't believe he refers to s specific favourite drink - but that phrase is the one everyone remembers from the film - Ffffffffvvvvvvvv!!!!!!!!!!!!
