Peeling eggs and tomatoes

Does anyone know why when you have boiled eggs, some shells peel off easily and others have to be picked off bit by bit...........and when dropping tomatoes into boiling water to peel them, some skins peel off easily and others don't?

with tomatoes, the heat makes the skin pop so it makes it easier to peel, I suppose it shrinks with the heat.

Eggs, the older the eggs the easier they are to peel. Older eggs have a gap of air in them, fresher ones are the difficult ones to peel
I find if you crack both ends of the egg to release the air it usually works

with an egg ive noticed that there is a slight skin under the shell. if you get under the skin, they are easy to peel, but if you are not through the skin, this is when they break into infuriating tiny pieces. i think peeling an egg successfully is really satisfying!
I had that problem with the boiled eggs, now i will boil them & run the pan under cold water for a few minutes, its even better if you can leave them in the pan of cold water for as long as possible before taking the shells off, i find the shells come off very easy this way & no messy looking boiled eggs!
